This is a pure rice sake (junmai) made with rice grains polished to 50% of their original volume (daiginjo). The product has a rich, fruity aroma, reminiscent of pear and melon, and a smooth, sweet texture derived from the rice, reflecting the purest style of its native Mie Prefecture. In accordance with the highest standards for premium sakes, this product leaves the palate feeling refreshed. It is particularly suited to complementing vintage wines.
Storage:
This sake should be stored in a cool place, with a temperature between 2 and 5°C. As with all sake, we recommend protecting it from light. To ensure optimal storage conditions, it is recommended that the bottle be kept upright in a dark environment. It is important to note that placing the bottle on its side can cause the sake to come into contact with the cork, which may result in damage.

Water, rice, koji rice. (Alcohol: 15.5%)
Shelf life:
Before opening and under the right conditions (those listed above), you can store this sake for years. Following opening, the product’s quality is contingent on storage conditions. The ‘standard’ shelf life is approximately ten days in the refrigerator, though some connoisseurs opt to store their bottles in a cool environment for up to four weeks, or even longer. The decision depends on your preference for oxidised sakes.
Serving chilled:
We recommend serving this sake chilled, at a temperature between 8 and 10°C. A wine glass is the best choice for those who wish to appreciate the bouquet of the sake, while a sake cup will reveal its texture more fully. There is no need to worry, as it will be excellent either way.
